The Perfect Smashburger Recipe – Crispy and Juicy Every Time

Equipment

  • Cast iron skillet or flat griddle
  • Metal spatula or burger press
  • Parchment paper (optional, for pressing patties)

Ingredients
  

  • 1 lb ground beef 80/20 chuck blend
  • Salt to taste
  • Black pepper to taste
  • 4 slices American cheese
  • 4 soft burger buns potato or brioche recommended
  • 2 tbsp butter for toasting buns
  • Optional toppings: pickles sliced tomatoes, shredded lettuce, sliced onions, ketchup, mustard, mayo

Instructions
 

Divide and Shape:

  • Divide the ground beef into 4 equal portions (about 3-4 oz each). Gently roll each portion into loose balls without compacting.

Preheat & Toast Buns:

  • Heat a cast iron skillet or griddle over high heat until very hot. Butter the cut sides of the buns and toast them, cut-side down, in the skillet until golden brown. Remove and set aside.

Smash the Patties:

  • Place one beef ball onto the hot skillet. Immediately press down firmly with a spatula or burger press to flatten into a thin patty about ¼ inch thick. Use parchment paper if desired to prevent sticking.

Season and Sear:

  • Sprinkle salt and pepper generously over the patty. Cook without moving for 1½ to 2 minutes until edges are dark brown and crispy.

Flip and Add Cheese:

  • Flip the patty carefully. Place a slice of American cheese on top. Cook for another 1 minute, until cheese melts and patty is cooked through.

Assemble Burgers:

  • Place the cheesy patty on the toasted bun bottom. Add your favorite toppings. Cover with the top bun and serve immediately.

Notes

  • Use ground beef with 20% fat for juicy, flavorful patties.
  • Do not press the patties after flipping this preserves juiciness.
  • Smashburgers are best served hot off the griddle to enjoy crispy edges.
