Ingredients
  

  • 1 tablespoon olive oil
  • 1 medium onion diced
  • 1 bell pepper red or green, chopped
  • 2 cloves garlic minced
  • 1 pound ground beef
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and black pepper to taste
  • 1 tablespoon tomato paste
  • 1 15 oz can crushed tomatoes
  • 1 15 oz can kidney beans, drained and rinsed
  • 1 15 oz can black beans, drained and rinsed
  • 1 cup beef broth or vegetable broth

Instructions
 

  • In a large pot, heat olive oil over medium heat. Add onion, bell pepper, and garlic. Sauté for 3–4 minutes until fragrant and softened.
  • Add the ground beef and cook until browned, breaking it up as it cooks. Drain excess grease if needed.
  • Stir in chili powder, cumin, paprika, salt, pepper, and tomato paste. Cook for 1–2 minutes to release the spices’ aroma.
  • Add crushed tomatoes, both beans, and broth. Stir well and bring to a gentle boil.
  • Reduce heat and simmer uncovered for 15 minutes until thickened. Taste and adjust seasoning if needed.
  • Serve hot with your favorite toppings like shredded cheese, sour cream, or chopped green onions.
